Peanut Butter Molasses Cookies

Thanksgiving has come and gone, and Christmas will be here before you know it! This is about the time when I start making cookie dough to stash in my freezer to bake later. First up – Peanut Butter Molasses cookies, this recipe makes about 3 dozen cookies – perfect for a cookie exchange. The peanut butter flavor is subtle, and balances out the tang of the molasses, it’s a good partnership! 

  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/3 cup molasses
  • 1/3 cup creamy peanut butter
  • 2 1/4 cup flour
  • 1/4 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • additional sugar for rolling cookies
  1. Cream butter, sugar, egg, molasses, and peanut butter with an electric mixer on medium speed until well combined.
  2. In a separate bowl, whisk together flour, cloves, cinnamon, and baking soda. On low speed, add the flour mixture in batches. Wrap the dough in plastic and chill for an hour.
  3. Scoop the dough by tablespoons, form into balls, and roll in granulated sugar. Place then 2″ apart on a parchment lined baking sheet and bake for 12 to 15 minutes. Let sit on baking sheet for 5 minutes, the transfer to a wire rack. Makes about 3 dozen cookies.
