Thanksgiving has come and gone, and Christmas will be here before you know it! This is about the time when I start making cookie dough to stash in my freezer to bake later. First up – Peanut Butter Molasses cookies, this recipe makes about 3 dozen cookies – perfect for a cookie exchange. The peanut butter flavor is subtle, and balances out the tang of the molasses, it’s a good partnership!
- 1/2 cup butter softened
- 1 cup granulated sugar
- 1 large egg
- 1/3 cup molasses
- 1/3 cup creamy peanut butter
- 2 1/4 cup flour
- 1/4 teaspoon ground cloves
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- additional sugar for rolling cookies
- Cream butter, sugar, egg, molasses, and peanut butter with an electric mixer on medium speed until well combined.
- In a separate bowl, whisk together flour, cloves, cinnamon, and baking soda. On low speed, add the flour mixture in batches. Wrap the dough in plastic and chill for an hour.
- Scoop the dough by tablespoons, form into balls, and roll in granulated sugar. Place then 2″ apart on a parchment lined baking sheet and bake for 12 to 15 minutes. Let sit on baking sheet for 5 minutes, the transfer to a wire rack. Makes about 3 dozen cookies.
