Oatmeal Peanut Butter Chocolate Chip Cookies

Due to July’s stifling heat and humidity, I haven’t been baking as much as I’d like. So when the thermometer dips below 90º, I pull out my trusty mixing bowl and hand mixer, and get to work! This recipe is the perfect combo of three classic cookies, and are a big hit in our house.

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  1. In a large bowl, cream butter, peanut butter, and sugars – then beat in the egg and vanilla.
  2. In a small bowl, add flour, oats, baking soda, and salt, whisk to combine. Stir in chocolate chips.
  3. Drop by rounded tablespoons onto an ungreased baking sheet, 2 ” apart. Bake at 350º for 10 to 12 minutes, or until lightly browned. Let cool on a wire rack. Makes 3 dozen cookies.
