Pineapple Banana Muffins

I’m always looking for a way to repurpose the overripe bananas in my fruit bowl. While we love my mom’s banana bread – this recipe adds pineapple tidbits for a tropical twist. I have a feeling that Jack Lord would have loved these!

  • 4 medium bananas
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 1 cup pineapple tidbits
  1. Preheat oven to 350º. Line two muffin pans with 18 paper liners, set aside.
  2. Mash the bananas in a large bowl. Add the sugars, eggs, butter and vanilla.
  3. In a small bowl, whisk the baking soda and flour together. Add to wet ingredients in three batches until combined. Stir in the pineapple tidbits.
  4. Drop 2 heaping tablespoons in each muffin paper, bake for 20 minutes or until a toothpick inserted into the center comes out clean.
