I’m always looking for a way to repurpose the overripe bananas in my fruit bowl. While we love my mom’s banana bread – this recipe adds pineapple tidbits for a tropical twist. I have a feeling that Jack Lord would have loved these!
- 4 medium bananas
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 1/2 cup butter, melted
- 1/2 teaspoon vanilla
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1 cup pineapple tidbits
- Preheat oven to 350º. Line two muffin pans with 18 paper liners, set aside.
- Mash the bananas in a large bowl. Add the sugars, eggs, butter and vanilla.
- In a small bowl, whisk the baking soda and flour together. Add to wet ingredients in three batches until combined. Stir in the pineapple tidbits.
- Drop 2 heaping tablespoons in each muffin paper, bake for 20 minutes or until a toothpick inserted into the center comes out clean.
