These cookies, paired with a cup of coffee on a cold afternoon is pure bliss! They’re easy to put together, and make a great gift. Because who doesn’t love a chocolate dipped, espresso flavored cookie?
- 1 cup flour
- 1/4 teaspoon baking powder
- 1 tablespoon espresso powder (or instant coffee), dissolved in 1 tablespoon hot water
- 6 tablespoons butter, softened
- 1/4 cup confectioners sugar
- 1/4 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 teaspoon Crisco or corn syrup
- Preheat oven to 320º, line a baking sheet with parchment paper.
- In a medium bowl, sift flour and baking powder.
- In a small bowl, dissolve espresso powder in hot water.
- In a large bowl, cream butter and confectioners sugar until light and fluffy, then add espresso and vanilla. Mix in flour until combined.
- Scoop out heaping 1/2 tablespoons of dough, roll into balls, and flatten with the tines of a fork. Bake for 13 to 15 minutes, let cool on a wire rack.
- In a small bowl, combine the chocolate chips and Crisco, microwaving in 30 second increments, stirring after each round until the chocolate is melted.
- Dip cookies in melted chocolate, and place on a wax paper lined baking sheet to firm up. Makes 20 to 25 cookies.
