I’m always looking for a way to use up the spotted bananas in the fruit bowl. These muffins get their flavor from bananas, peanut butter, and chocolate chips – a perfect trifecta!
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 3 – 4 ripe bananas, mashed
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup applesauce, sweetened or unsweetened
- 1/2 cup peanut butter
- 1/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup chocolate chips
- Preheat oven to 350º. Line 2 muffins pans with 18 paper liners, set aside.
- In a small bowl, mix flour, baking powder, baking soda, salt, and cinnamon. In a large bowl, whisk the bananas, sugar and eggs – then add the applesauce, peanut butter, oil, and vanilla. Stir in the flour mixture until just combined, then fold in the chocolate chips
- Fill muffin cups 3/4 from the top, bake for 15 to 20 minutes.
