This is a simple sugar cookie dough that doesn’t need to be chilled, rolls out like a dream, and tastes delicious. I dipped these in some semi-sweet melted chocolate, because hey – it’s Valentine’s Day!
- 1 cup salted butter, room temperature
- 1 1/2 cups confectionery sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 3/4 cups flour
- teaspoons baking powder
- Preheat oven to 400º, line two baking sheets with parchment paper. In the bowl of a stand mixer, beat butter and confectioners sugar until light and fluffy.
- Add egg and vanilla extract.
- Sift flour and baking powder, add to butter mixture on medium speed.
- Roll out dough between sheets of parchment paper 1/4″ thick, cut out shapes and place them 1″ apart. Bake for 7 to 10 minutes until cookies are golden on the bottom. Cool on a wire rack. Makes 3 dozen.
- 1/2 bag mini semi-sweet chocolate chips
- 1/2 tablespoon vegetable shortening
- Place chocolate chips and shortening in a small bowl, microwave in 30 second increments, stirring after each time until chocolate is smooth and melted.
- Dip each cookie in the chocolate and place on wax paper to set up.
