Valentine’s Sugar Cookies

This is a simple sugar cookie dough that doesn’t need to be chilled, rolls out like a dream, and tastes delicious. I dipped these in some semi-sweet melted chocolate, because hey – it’s Valentine’s Day!

  • 1 cup salted butter, room temperature
  • 1 1/2 cups confectionery sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 3/4 cups flour
  • teaspoons baking powder
  1. Preheat oven to 400º, line two baking sheets with parchment paper. In the bowl of a stand mixer, beat butter and confectioners sugar until light and fluffy.
  2. Add egg and vanilla extract.
  3. Sift flour and baking powder, add to butter mixture on medium speed.
  4. Roll out dough between sheets of parchment paper 1/4″ thick, cut out shapes and place them 1″ apart. Bake for 7 to 10 minutes until cookies are golden on the bottom. Cool on a wire rack. Makes 3 dozen.
  • 1/2 bag mini semi-sweet chocolate chips
  • 1/2 tablespoon vegetable shortening
  1. Place chocolate chips and shortening in a small bowl, microwave in 30 second increments, stirring after each time until chocolate is smooth and melted.
  2. Dip each cookie in the chocolate and place on wax paper to set up.

    It’s a good cut-out cookie recipe because it doesn’t spread too much – and it tastes good.
