Lemon Loaf

There’s nothing like a citrusy lemon loaf on a cold Sunday afternoon, perfect with a cup of tea. It gets it’s flavor from lemon juice, lemon zest, and sour cream – it’s soft, moist, and scrumptious!

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter, melted & room temperature
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 1/2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup sour cream
  1. Preheat oven to 350º. Grease and line a 9″ x 5″ loaf pan, and line with parchment paper.
  2. In a small bowl, whisk flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat eggs and sugar for 2 minutes. Add the butter and the vegetable oil.
  4. Mix in the vanilla, lemon zest, and lemon juice, then add the sour cream.
  5. Pour into prepared pan and bake for 50 minutes, testing with a toothpick. Cool on a wire rack.

Glaze:

  • 1/2 cup confectioners sugar
  • 1 to 1 1/2 tablespoons lemon juice
  1. Whisk ingredients together in a measuring cup, and drizzle over loaf.

    Make one, it’ll give you an excuse to turn on your oven since the temps in your area are colder than here!
