There’s nothing like a citrusy lemon loaf on a cold Sunday afternoon, perfect with a cup of tea. It gets it’s flavor from lemon juice, lemon zest, and sour cream – it’s soft, moist, and scrumptious!
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup unsalted butter, melted & room temperature
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1 1/2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 1/2 cup sour cream
- Preheat oven to 350º. Grease and line a 9″ x 5″ loaf pan, and line with parchment paper.
- In a small bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, beat eggs and sugar for 2 minutes. Add the butter and the vegetable oil.
- Mix in the vanilla, lemon zest, and lemon juice, then add the sour cream.
- Pour into prepared pan and bake for 50 minutes, testing with a toothpick. Cool on a wire rack.
Glaze:
- 1/2 cup confectioners sugar
- 1 to 1 1/2 tablespoons lemon juice
- Whisk ingredients together in a measuring cup, and drizzle over loaf.
