Vanilla Yogurt Cake

This is an easy cake, it takes about 5 minutes to put together. No butter or flour, just vanilla yogurt, eggs, vanilla, and cornstarch, which gives it a custardy texture. It’s not overly sweet, so you may want to drizzle honey on top, or dust it with confectioners sugar and top it with fresh fruit!

  • 1 1/2 cups vanilla yogurt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 5 tablespoons cornstarch
  1. Preheat oven to 350º. Line a loaf pan with parchment paper.
  2. In a large bowl, whisk yogurt and eggs until well blended.
  3. Add the vanilla and cornstarch, whisk until smooth.
  4. Pour into prepared pan and bake for 50 to 60 minutes, testing with a toothpick.
  5. Let cool on a wire rack then refrigerate it to help firm it up.
