This is an easy cake, it takes about 5 minutes to put together. No butter or flour, just vanilla yogurt, eggs, vanilla, and cornstarch, which gives it a custardy texture. It’s not overly sweet, so you may want to drizzle honey on top, or dust it with confectioners sugar and top it with fresh fruit!
- 1 1/2 cups vanilla yogurt
- 4 large eggs
- 1 teaspoon vanilla extract
- 5 tablespoons cornstarch
- Preheat oven to 350º. Line a loaf pan with parchment paper.
- In a large bowl, whisk yogurt and eggs until well blended.
- Add the vanilla and cornstarch, whisk until smooth.
- Pour into prepared pan and bake for 50 to 60 minutes, testing with a toothpick.
- Let cool on a wire rack then refrigerate it to help firm it up.
