Peanut Butter Oatmeal Banana Bars

I love making bars because they’re no fuss, no muss. The fact that they’re made with bananas and oats makes it perfectly okay to have for breakfast. These peanut butter Oatmeal banana bars are moist and dense, and delicious with the addition of chocolate chips or you could add some chopped walnuts for crunch factor!

  • 1 1/2 cups flour
  • 1 cup old fashioned rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 3/4 cup chocolate chips (optional)
  1. Line a 8″ square baking with parchment paper, spray with baking spray. Preheat oven to 350º.
  2. In a small bowl, combine flour, oats, baking powder, salt and cinnamon.
  3. In a large bowl, cream butter and sugars with an electric mixer. Add the egg and vanilla, then the bananas and peanut butter.
  4. With the mixer on low, add the flour mixture mixing just until combined. Stir in the chocolate chips if using.
  5. Bake for 40 to 45 minutes, testing with a toothpick. Let cool for 15 minutes, then remove from pan and let cool on a wire rack.
