Apple Oatmeal Muffins

Now that the weather is getting chilly, it’s always nice to have an apple oatmeal muffin to go with your morning coffee. They have a wonderful texture from the oats, a hint of cinnamon, and they’re bursting with chunks of juicy apples. You could also swap out the apples for pears or cranberries!

  • 1 cup rolled oats
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup light brown sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup melted butter or vegetable oil
  • 1 teaspoon vanilla
  • 1 cup diced apples
  1. Line a muffin pan with 12 paper liners. Preheat oven to 350º.
  2. In a large bowl stir oats, flour, baking powder, cinnamon, and brown sugar.
  3. In a smaller bowl, whisk milk, eggs, butter/oil, and vanilla. Add to the dry ingredients and mix until combined. Fold in the apples.
  4. Fill the muffins cups, and bake for 18 to 20 minutes, testing with a toothpick. Cool on a wire rack.
