Apple Coconut Muffins

Apples and coconut seems like an odd combination, but in the case of these muffins – it works! They’re not overly sweet, which is okay because you get a taste of the chopped apple in every bite!

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon vanilla
  • 2 large eggs
  • 1 cup milk
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 cup + 2 tablespoons sweetened coconut
  • 1 1/2 cups chopped apple
  1. Preheat oven to 350º. Line a muffin pan with 18 papers.
  2. In a large bowl, beat butter, sugar, and vanilla. Add eggs and milk.
  3. In a small bowl, whisk flour, baking powder, salt, and nutmeg. Add to the wet ingredients until just combined.
  4. Fold in the coconut and apples. Fill muffin cups and bake for 20 to 25 minutes. Let cool on a wire rack.
