

Apples and coconut seems like an odd combination, but in the case of these muffins – it works! They’re not overly sweet, which is okay because you get a taste of the chopped apple in every bite!
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 teaspoon vanilla
- 2 large eggs
- 1 cup milk
- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 cup + 2 tablespoons sweetened coconut
- 1 1/2 cups chopped apple
- Preheat oven to 350º. Line a muffin pan with 18 papers.
- In a large bowl, beat butter, sugar, and vanilla. Add eggs and milk.
- In a small bowl, whisk flour, baking powder, salt, and nutmeg. Add to the wet ingredients until just combined.
- Fold in the coconut and apples. Fill muffin cups and bake for 20 to 25 minutes. Let cool on a wire rack.



Hmmm, may have to try that. I never even thought about ‘that’ combination!
