Spicy Tilapia with Tomatoes

What I love about this dish is it’s spiciness – tilapia tends to be a mild fish so the combination of the garlic, Cajun spices and fresh tomatoes give it a little zip. It uses up the bounty of tomatoes in my backyard, and start to finish – can be made in about 20 minutes. Why labor on Labor Day? 

  • 2 tablespoons olive oil
  • 1 small, yellow onion, diced
  • 2 cloves garlic, minced
  • 3 – 4 large tomatoes, diced (about 3 cups)
  • 2 1/2 teaspoons Cajun seasoning
  • 4 tilapia filets
  1. In a large skillet over medium heat, warm the olive oil and add the onions and garlic.  Stir frequently, so as not to burn the garlic, until onions soften, about 2 to 3 minutes. Add the diced tomatoes and Cajun seasoning to the pan and cook for a few minutes more.
  2. Place tilapia filets on top of the cooked tomatoes, cover, and simmer for 13 to 15 minutes. Place the filets on a platter and ladle the sauce on top. Serves four.

    Did you ever try in with Haddock (Cod)? That would be a great dish! 🙂

    I was going to buy cod, but the fish store was out, so I settled on the tilapia. It was good, but I tend to like a thicker fish.
