I threw this bread together on Sunday afternoon while the fellas were at the gym. I used up the leftover cream cheese in the fridge, and the brown spotted bananas on the kitchen table. The result is this delicious bread, moist and studded with strawberries!
- 6 tablespoons butter, softened
- 4 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/2 cup mashed bananas (about 2 small)
- 3/4 cup chopped fresh strawberries
- Preheat oven to 350º. Grease and flour a 8.5 x 4.5 x 3 inch loaf pan.
- In a large bowl with an electric mixer, cream the butter and cream cheese together. Slowly add the sugar, beating until well combined, then add the egg.
- In a separate bowl, whisk the flour, salt, baking soda, and baking powder together. Add the flour to the butter/cream cheese mixture in three batches, mixing until just combined. Add the vanilla extract and bananas, then fold in the strawberries.
- Pour batter into loaf pan, and smooth out the top with a rubber spatula. Bake for 1 hour, test with a toothpick. Cool on a wire rack for 15 minutes, remove bread from pan, and let cool completely.
