Strawberry Banana Bread

I threw this bread together on Sunday afternoon while the fellas were at the gym. I used up the leftover cream cheese in the fridge, and the brown spotted bananas on the kitchen table. The result is this delicious bread, moist and studded with strawberries! 

  • 6 tablespoons butter, softened
  • 4 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mashed bananas (about 2 small)
  • 3/4 cup chopped fresh strawberries
  1. Preheat oven to 350º. Grease and flour a 8.5 x 4.5 x 3 inch loaf pan.
  2. In a large bowl with an electric mixer, cream the butter and cream cheese together. Slowly add the sugar, beating until well combined, then add the egg.
  3. In a separate bowl, whisk the flour, salt, baking soda, and baking powder together. Add the flour to the butter/cream cheese mixture in three batches, mixing until just combined. Add the vanilla extract and bananas, then fold in the strawberries.
  4. Pour batter into loaf pan, and smooth out the top with a rubber spatula. Bake for 1 hour, test with a toothpick. Cool on a wire rack for 15 minutes, remove bread from pan, and let cool completely.
