I stumbled across the recipe for these cookies searching for something else. I haven’t made them in years, so I thought I’d give it a whirl yesterday afternoon. The addition of the Rice Krispies make these cookies crispy-crunchy and adds a certain lightness to them.
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 cup butter
- 2/3 cup granulated sugar
- 1 teaspoon vanilla
- 1 large egg
- 2 cups Rice Krispie cereal
- 3/4 cup chocolate chips
- Preheat oven to 350º, line a baking sheet with parchment paper. In a medium bowl, combine the flour and baking soda, set aside.
- In the bowl of an electric mixer, cream butter and sugar, mix in vanilla and egg, then add the dry ingredients.
- Stir in cereal and chocolate chips.
- Drop tablespoons of dough 2 inches apart, and bake for 10 to 12 minutes. Makes 2 dozen cookies.
