A banana bread, swirled with a chocolate batter and chocolate chips. Needless to say, it was a huge hit at our house!
- 3 large bananas – very ripe
- 1/2 cup butter, melted
- 3/4 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups flour, divided
- 1/2 teaspoon cinnamon
- 1/4 cup cocoa powder
- 3/4 cup chocolate chips
- Preheat oven to 350º. Grease a 9″ x 5″ loaf pan.
- Melt butter in a large bowl in the microwave, and mash the bananas. Whisk in the brown sugar, egg, vanilla, baking soda, and salt. Stir in 1 cup of the flour until just combined.
- Pour half of the batter into another bowl. In one bowl, stir in the remaining 1/4 cup of flour and cinnamon. In the second bowl, stir in the cocoa powder and chocolate chips.
- Drop large spoonfuls of batter into loaf pan – banana/chocolate/banana then chocolate/banana/chocolate. Using a butter knife, make a few figure eights in the batters, marbling them together – but not too much, you want two distinct batters – you don’t want to mix them together.
- Bake for 55 to 65 minutes, test with a toothpick. Cool in pan for 15 minutes, then run a knife around the sides, and turn out onto a rack.
