I did an inventory of my cupboards yesterday, and decided that the half bag of butterscotch chips would be perfect for a pan of blondies.
- 1/2 cup butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1 cup flour
- 1/2 cup butterscotch chips
- Preheat oven to 350º, grease a 9″ x 9″ baking pan.
- In a large bowl, beat butter and sugars until light and fluffy. Add egg and vanilla.
- In a small bowl, whisk flour and baking powder. Add it to butter/sugar mixture. Fold in butterscotch chips. Press into prepared baking pan and bake for 30 to 35 minutes.
