Last week, we had quite a few days of 90+ degree days around these parts. When the weather fills you with dread about making dinner, this chopped salad is a lifesaver. Mine had imported tuna in olive oil and garbanzo beans as a protein, tomatoes, avocado, cucumbers, red roasted peppers, artichoke hearts, and fresh mozzarella. Chopped salad, because you can’t serve popsicles for dinner every night!
- 1 – 5 oz. can imported tuna in oil
- 1 cup garbanzo beans, rinsed and drained
- 1 cup cucumber, peeled, quartered lengthwise, seeds removed
- 1 red roasted pepper, skin and seeds removed
- 1 large tomato, chopped
- 1 avocado, chopped
- 1 small red onion, finely chopped
- 6 canned artichoke hearts, chopped
- 1 cup fresh mozzarella, cut into bite sized pieces
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon oregano
- juice of half a lemon
- 2 tablespoons olive oil
- salt and pepper to taste
