It’s that time of year, I’m posting recipes for Christmas cookies. Start making them now and store the dough in your freezer to bake later. These chocolate chip ricotta cookies were a huge hit with the fellas, my best test audience!
- 2 cups flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup butter, softened
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- zest of one orange
- 1 cup ricotta cheese
- 1 cup mini chocolate chips
- In a small bowl, whisk flour, baking soda and baking powder.
- In a large bowl, blend butter and sugars. Add egg and vanilla, zest, mix in ricotta, then fold in chocolate chips.
- Chill dough for one hour.
- Preheat oven to 350º. Line a baking sheet with parchment, roll one tablespoon of dough into a ball spacing them about 2″ apart. Bake for 12 to 15 minutes, cool on wire rack.
- Makes about 3 dozen cookies.
