Yogurt Pear Cake

A simple pear cake while we’re waiting for the summer fruits to  show up!

  • 3/4 cup plain yogurt
  • 1/4 cup vegetable oil
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 1/4 cups flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 medium ripe pears
  • 1 teaspoon cinnamon
  • confectioners sugar
  1. In a large bowl, combine yogurt, oil, sugar, eggs, vanilla, and zest.
  2. In a small bowl, whisk the flour, baking powder, baking soda, and salt. Add to the large bowl. Pour  batter into a 9″ cake pan, top with sliced pears. Dust with cinnamon. Bake for 40 to 50 minutes.
