A simple pear cake while we’re waiting for the summer fruits to show up!
- 3/4 cup plain yogurt
- 1/4 cup vegetable oil
- 2/3 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 1/4 cups flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium ripe pears
- 1 teaspoon cinnamon
- confectioners sugar
- In a large bowl, combine yogurt, oil, sugar, eggs, vanilla, and zest.
- In a small bowl, whisk the flour, baking powder, baking soda, and salt. Add to the large bowl. Pour batter into a 9″ cake pan, top with sliced pears. Dust with cinnamon. Bake for 40 to 50 minutes.
