The Boy and I made this light orange cake over the weekend. It’s simple to make, using just a few ingredients you probably already have on hand. The glaze is optional, but we just couldn’t help ourselves!
- 1 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 2 tablespoons orange zest
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup butter, melted
- 3/4 cup freshly squeezed orange juice
- Preheat oven to 350º. Grease an 8 1/2″ x 4 1/2″ loaf pan, line with parchment.
- In a small bowl, whisk flour and baking powder together, set aside.
- In a large bowl, zest oranges and add sugar, using your fingers or a fork and combine them together. Whisk in eggs until smooth, then add melted butter and juice.
- Add the flour mixture and whisk until just combined. Pour into prepared pan and bake for 35 to 40 minutes, testing with a toothpick. Let cool in pan for 20 minutes, then remove and let finish cooling on a wire rack.
- 1/2 cup confectioners sugar
- 2 to 3 tablespoons orange juice
- Mix sugar and juice until smooth and drizzle over cake.
