Orange Cake Loaf

The Boy and I made this light orange cake over the weekend. It’s simple to make, using just a few ingredients you probably already have on hand. The glaze is optional, but we just couldn’t help ourselves!

  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons orange zest
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup butter, melted
  • 3/4 cup freshly squeezed orange juice
  1. Preheat oven to 350º. Grease an 8 1/2″ x 4 1/2″ loaf pan, line with parchment.
  2. In a small bowl, whisk flour and baking powder together, set aside.
  3. In a large bowl, zest oranges and add sugar, using your fingers or a fork and combine them together. Whisk in eggs until smooth, then add melted butter and juice.
  4. Add the flour mixture and whisk until just combined. Pour into prepared pan and bake for 35 to 40 minutes, testing with a toothpick. Let cool in pan for 20 minutes, then remove and let finish cooling on a wire rack.
  • 1/2 cup confectioners sugar
  • 2 to 3 tablespoons orange juice
  1. Mix sugar and juice until smooth and drizzle over cake.
