Peanut butter puffed rice cookies is a recipe I’ve had for years and completely forgot about until I was looking in my recipe folder for something else. The cereal adds a nice crunchiness to the cookie, and they only take 10 minutes to bake!
- 1/2 cup butter, room temperature
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/2 cup peanut butter
- 1 large egg
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups puffed rice cereal
- 3/4 cup chocolate chips
- Preheat oven to 350º, line a baking sheet with parchment paper.
- Cream butter and sugars, add peanut butter then egg and vanilla.
- In a small bowl, whisk flour with baking soda and salt. Add to butter/sugar mixture.
- Stir in puffed rice and chocolate chips.
- Drop by tablespoon and bake for 9 to 10 minutes. Let cool on a wire rack. Makes 3 dozen cookies.
