Peanut Butter Puffed Rice Cookies

Peanut butter puffed rice cookies is a recipe I’ve had for years and completely forgot about until I was looking in my recipe folder for something else. The cereal adds a nice crunchiness to the cookie, and they only take 10 minutes to bake!

  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 cup peanut butter
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups puffed rice cereal
  • 3/4 cup chocolate chips
  1. Preheat oven to 350º, line a baking sheet with parchment paper.
  2. Cream butter and sugars, add peanut butter then egg and vanilla.
  3. In a small bowl, whisk flour with baking soda and salt. Add to butter/sugar mixture.
  4. Stir in puffed rice and chocolate chips.
  5. Drop by tablespoon and bake for 9 to 10 minutes. Let cool on a wire rack. Makes 3 dozen cookies.
