Easy Blueberry Galette

The city pools just opened up this past weekend just in time for a heatwave, and we had pool plans. I decided to make a simple galette before heading out – the beauty of galettes is that you simple roll it out, fill it, fold it, and throw it in the oven. Baking time is a mere 30 minutes, and we were out the door – towels and sunscreen in hand!

  • 2 1/2 cups blueberries
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • zest of half a lemon
  • 1 1/2 teaspoons fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 pie crust
  • 1 large eggs and 1 tablespoon granulated sugar
  1. Preheat oven to 350º. Place parchment paper on a baking sheet.
  2. In a medium bowl, toss blueberries, with sugar, cinnamon, zest, lemon juice, and cornstarch.
  3. Roll out dough, pour blueberries in the center of the crust, leaving a 2″ to 3″ border. Fold the crust over the berries all the way around. Brush the crust with the beaten egg and sprinkle with the remaining 1 tablespoon of granulated sugar.
  4. Bake for 30 minutes, until golden.
