

These fritters are the perfect solution for the leftover mashed potatoes and corn on the cob in your fridge. All the ingredients are tossed in one bowl, and takes about five minutes to cook. They make a great dinner side, or topped with fried eggs at brunch.
- 1 cup mashed potatoes
- 1 cup corn
- 1/2 cup shredded cheddar cheese
- 1 large egg, beaten
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/4 cup vegetable oil
- In a large bowl, combine all the ingredients (except for the oil), and mix until well combined.
- Heat oil in a pan over medium high heat. Drop by the spoonful, and flatten slightly with a spatula. Cook for 2 to 3 minutes per side until golden. Remove and drain on paper towels. Makes 8 to 10.
