M&MCookies

M&M cookies are a classic. I haven’t made them in a while, so when the temperature dropped the other day, I grabbed a mixing bowl and fired up the oven. Post pool, the boy needs something to snack on after he wolfs down three bananas, and a couple of peaches. I sense a growth spurt coming on… 

  • 1/2 cup butter
  • 1/2 cup butter flavored shortening
  • 3/4 cup packed light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 egg
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups M&Ms

1. In a large mixing bowl, cream the butter, shortening, brown sugar and vanilla extract until light and fluffy. Beat in the egg.

2. In a separate bowl mix the flour, baking soda and salt together. Add to the butter – sugar mixture. Fold in 1 cup of M&Ms. Cover dough with plastic wrap and refrigerate for one hour.

3. Preheat oven to 350º. Shape dough into 1 inch balls and place 2 inches apart on an ungreased baking sheet. Use the remaining 1/2 cup of M&Ms to decorate the tops of the cookies. Bake for 11 to 13 minutes until golden. Let sit for 5 minutes and transfer to a rack to cool. Makes 2 dozen cookies.
