Blueberry Cake

BlueberryCake

This is the cake I made for our 4th of July barbecue, it was easy to put together, and delicious. The best part about unfussy desserts is that you can spend less time in the kitchen, and more time at the pool! 

  • 2 cups plus 1 teaspoon flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 sticks butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • zest of 1 orange
  • 1 cup  milk
  • 1/2 cup blueberries

For the topping:

  • 3 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup blueberries
  1. Preheat oven to 350º. Grease and flour a 9″ X 13″ baking pan.
  2. In a medium bowl, whisk 2 cups flour, baking powder, and salt together, set aside.
  3. In a large bowl, beat the butter and sugars together until light and fluffy. Add the eggs one at a time and the orange zest, scraping down the bowl.
  4. Add one third of the flour, half the milk, and repeat with remaining flour and milk until incorporated. Toss the blueberries with remaining teaspoon flour, and fold into the batter.
  5. Pour into prepared pan, even out with a spatula. Sprinkle cinnamon sugar over the batter, and top with blueberries. Bake for 45 to 50 minutes, testing with a toothpick.
