I had a hard time convincing The Boy to make zucchini muffins. He just couldn’t get over the fact that putting a vegetable in a muffin would be a good thing. He finally relented when he found out that chocolate chips were part of the recipe. Needless to say, he’s a fan!
- 1 1/2 cups grated zucchini
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup sour cream or plain yogurt
- 1 cup granulated sugar
- 1 1/2 cups flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup chocolate chips
- Preheat oven to 375º. Line two muffin pans with 16 papers.
- Put zucchini, oil, eggs, vanilla, and sour cream/yogurt in a large bowl, stir and add in sugar.
- In a small bowl, whisk flour, cinnamon, baking soda, baking powder, and salt. Add to the wet ingredients, then fold in chocolate chips.
- Put two heaping tablespoons in each muffin cup and bake for 16 to 20 minutes. Test with a toothpick.
