Lemon Blueberry Loaf

There’s nothing better than a blueberry lemon loaf with coffee on a lazy Sunday. The blueberries in the market are plump and juicy, it almost makes the ungodly heat bearable!

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup yogurt
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 1 cup blueberries

Glaze –

  • 1/2 cup confectioners sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  1. In a small bowl, whisk flour, baking powder, and salt. Set aside. Spray a loaf pan with baking spray and line it with parchment paper. Preheat oven to 350º.
  2. In a large bowl, blend yogurt, sugar, eggs, lemon zest, vanilla, and oil with an electric mixer.
  3. Add the flour mixture on low speed until incorporated. Fold in the blueberries tossed in a tablespoon of flour.
  4. Bake for 50 to 60 minutes. Let cool in pan for 15 minutes, remove from pan for 15 and let cool for another 15, and drizzle with glaze.
