Peanut Butter Chocolate Chip Banana Bread

It was another one of those “I bought too many bananas” situation – and ended up with mushy bananas no one wanted to eat. This bread is a combo of the mushy bananas, applesauce, and peanut butter with some mini chocolate chips swirled in the batter. It yields two loaves – one for you and one to share!

  • 2 cups flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups mashed banana (about 3 to 4 bananas)
  • 1/2 cup applesauce
  • 1/2 cup peanut butter
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mini chocolate chips
  1. Preheat oven to 350º. Spray 2 – 8″ x 4″ loaf pans with baking spray.
  2. In a small bowl, whisk the flour, sugar, baking soda, baking powder, and salt.
  3. In a large bowl, mash the bananas and add the applesauce, peanut butter, vegetable oil, eggs, and vanilla.
  4. Add the dry ingredients to the wet, mix until just combined. Fold in the chocolate chips.
  5. Divide the batter among the two pans. Bake for 45 to 50 minutes, tent with foil after 30 minutes. Let cool on a wire rack for 20 minutes, the remove from the pans and let cool completely.
