Orange Bread

This is a lovely quick bread, sunshine in a loaf! It’s brushed with an orange syrup and topped off with an orange glaze. Good for breakfast, good for a snack!

  • 1/2 cup butter, softened
  • 1 1/4 cup granulated sugar, divided
  • 2 large eggs, room temperature
  • 2 oranges, zested and juiced
  • 1 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 cup + 3 tablespoons orange juice, divided
  • 1/4 cup + 2 tablespoons vanilla yogurt, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup confectioners sugar
  1. Preheat oven to 350º.
  2. Cream butter and 1 cup sugar until light and fluffy. Beat in eggs, one at a time, add orange zest.
  3. In a small bowl, whisk flour, baking soda, baking powder, and salt. In another bowl, mix 1/4 cup orange juice, yogurt, and vanilla. Add flour and yogurt mixtures to the butter and sugar in three additions.
  4. Pour into a greased 9″ x 5″ loaf pan, bake for 45 to 55 minutes.
  5. While bread is baking, cook 1/4 cup of sugar and 2 tablespoons orange juice on low, until sugar dissolves.
  6. Cool cake in pan for 10 minutes. Remove from pan and place on a wire rack. Spoon syrup over cake and let cool completely.
  7. Whisk 1 cup of confectioners sugar and remaining 1 tablespoon of orange juice, drizzle over cooled cake.
