I made these muffins over the weekend, because it’s always nice to wake up on a lazy Sunday morning with something delicious to go with your coffee!
- 2 cups + 2 tablespoons flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1/4 cup fresh squeezed orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- Preheat oven to 350º. Line a muffin pan with 12 liners, set aside.
- Whisk flour, sugar, baking powder, and salt in a small bowl.
- In a large bowl, stir eggs, oil, and yogurt together. Add orange juice, zest and vanilla. Stir in flour mixture until just combined, being careful not to over mix.
- Divide among the muffin cups, and bake for 20 minutes, testing with a toothpick. Let cool on a wire rack.
- 1/2 cup confectioners sugar
- 2 to 3 tablespoons orange juice
- Whisk sugar and orange juice together, and brush on top of the muffins.
Huh, hadn’t seen THAT version before.
