Orange Yogurt Muffins

I made these muffins over the weekend, because it’s always nice to wake up on a lazy Sunday morning with something delicious to go with your coffee!

  • 2 cups + 2 tablespoons flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/4 cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350º. Line a muffin pan with 12 liners, set aside.
  2. Whisk flour, sugar, baking powder, and salt in a small bowl.
  3. In a large bowl, stir eggs, oil, and yogurt together. Add orange juice, zest and vanilla. Stir in flour mixture until just combined, being careful not to over mix.
  4. Divide among the muffin cups, and bake for 20 minutes, testing with a toothpick. Let cool on a wire rack.
  • 1/2 cup confectioners sugar
  • 2 to 3 tablespoons orange juice
  1. Whisk sugar and orange juice together, and brush on top of the muffins.
