Apple Fritter Coffee Cake

This is a little something I baked on Sunday to go with our afternoon coffee. It’s cake, with chopped apples, brown sugar, cinnamon, and a vanilla glaze – it was easy to throw together, and delicious!

  • 3 Granny Smith apples, peeled and chopped
  • 1/2 cup butter, softened
  • 2/3 cup + 2 tablespoons granulated sugar, divided
  • 2 teaspoons cinnamon, divided
  • 1/3 cup light brown sugar
  • 1 1/2 cups flour
  • 1 3/4 teaspoons baking powder
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup whole milk
  1. Preheat oven to 350º. Grease a 9″ x 13″ baking pan.
  2. Toss chopped apples in a medium bowl with 2 tablespoons granulated sugar, and 1 teaspoon cinnamon, set aside.
  3. In a small bowl, mix brown sugar and 1 teaspoon cinnamon, set aside.
  4. In a large bowl, cream butter and 2/3 cup granulated sugar, then add flour and baking powder. Add eggs, one at a time, stir in vanilla and milk. Pour into prepare pan and smooth the batter out with a spatula.
  5. Sprinkle the chopped apples over the batter, then the brown sugar and cinnamon mixture. Use a knife to swirl the cinnamon and apples into the batter. Bake for 40 minutes, and test with a toothpick.
  6. Let cool on a wire rack for 20 minutes.

Glaze:

  • 1/2 cup of confectioners sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons water
  1. Mix all ingredients in a measuring cup, and drizzle over the cake.
  2. Let set up for 30 minutes and enjoy!
