The peaches were gorgeous at the market this weekend, my first thought was to make a peach pie. Those plans were scrapped when I discovered that the temperatures would be close to triple digits. Plan B – muffins, quick to mix up, and a mere 20 minutes in the oven. Sold!
- 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups peaches, peeled and chopped
- Preheat oven to 350º, line a muffin pan with papers.
- In a small bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, blend sugars, eggs, oil, and vanilla with an electric mixer. Add flour mixture until just combined. Fold in peaches.
- Divide batter evenly among the muffin cups, bake for 20 to 22 minutes. Test with a toothpick, let cool on a wire rack.
Huh, never thought of that…
They were really good, I make a lot of muffins for the fellas’ lunchboxes.
