It was another one of those “I bought too many bananas” situation – and ended up with mushy bananas no one wanted to eat. This bread is a combo of the mushy bananas, applesauce, and peanut butter with some mini chocolate chips swirled in the batter. It yields two loaves – one for you and one to share!
- 2 cups flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups mashed banana (about 3 to 4 bananas)
- 1/2 cup applesauce
- 1/2 cup peanut butter
- 1/4 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mini chocolate chips
- Preheat oven to 350º. Spray 2 – 8″ x 4″ loaf pans with baking spray.
- In a small bowl, whisk the flour, sugar, baking soda, baking powder, and salt.
- In a large bowl, mash the bananas and add the applesauce, peanut butter, vegetable oil, eggs, and vanilla.
- Add the dry ingredients to the wet, mix until just combined. Fold in the chocolate chips.
- Divide the batter among the two pans. Bake for 45 to 50 minutes, tent with foil after 30 minutes. Let cool on a wire rack for 20 minutes, the remove from the pans and let cool completely.
