I had some apples leftover from my Thanksgiving pie baking marathon, so I decided to make some muffins! These muffins are perfection with a cup of coffee in the morning.
- 1 1/2 cups flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 1 large egg
- 1/3 cup milk
- 2 Granny Smith apples, peeled, cored, and chopped
Topping
- 1/4 cup granulated sugar
- 2 tablespoons flour
- 2 tablespoons butter, room temperature
- 1 teaspoon cinnamon
- Preheat oven to 400º. Line a muffin pan with 12 cupcake papers.
- In a large bowl, whisk flour, sugars, baking powder, cinnamon and salt.
- Add oil, egg, and milk, then fold in apples. Divide batter in muffin papers.
- In a small bowl, combine the ingredients for the topping, sprinkle on top of the batter.
- Bake for 15 to 20 minutes, let cool on a wire rack.
