French Apple Cake

I’ve never met an apple cake I didn’t like. The sweet chunks of apple negates the need for frosting, just a light sprinkling of confectioners sugar will do the trick – hello October!

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick butter, room temperature
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 large Granny Smith apples, cut into 1/2″ cubes
  • confectioners sugar for dusting
  1. Grease a 9″ cake pan and line with parchment paper.
  2. In a small bowl, whisk flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar, until light and fluffy, then the eggs one at a time and vanilla. Add the flour until just incorporated, and fold in the apples.
  4. Bake for 40 minutes, testing with a toothpick. Let cool on a wire rack for 20 minutes, then remove from pan.
