
Cowboy Blondies are chock full of everything good – peanut butter, coconut, pecans, oats, and chocolate chips. The fellas are crazy about them, and I do believe they’ll be making the holiday cookie cut!
- 1/2 cup butter, melted and slightly cooled
- 1 1/2 cups light brown sugar
- 2 large eggs
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/2 cup oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup chopped pecans/walnuts
- 1 cup coconut
- Preheat oven to 350º. Line an 8″ x 8″ pan with parchment paper.
- In a large bowl, beat butter, light brown sugar, eggs peanut butter and vanilla until smooth.
- Add in flour, oats, baking soda, baking powder, and salt until just combined. Fold in chocolate chips, nuts, and coconut.
- Pour into pan, and smooth out top with a rubber spatula. Bake for 30 to 40 minutes. Test with a toothpick, let cool on a wire rack, then remove from pan.
