Cowboy Blondies

Cowboy Blondies are chock full of everything good – peanut butter, coconut, pecans, oats, and chocolate chips. The fellas are crazy about them, and I do believe they’ll be making the holiday cookie cut!

  • 1/2 cup butter, melted and slightly cooled
  • 1 1/2 cups light brown sugar
  • 2 large eggs
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup chopped pecans/walnuts
  • 1 cup coconut
  1. Preheat oven to 350º. Line an 8″ x 8″ pan with parchment paper.
  2. In a large bowl, beat butter, light brown sugar, eggs peanut butter and vanilla until smooth.
  3. Add in flour, oats, baking soda, baking powder, and salt until just combined. Fold in chocolate chips, nuts, and coconut.
  4. Pour into pan, and smooth out top with a rubber spatula. Bake for 30 to 40 minutes. Test with a toothpick, let cool on a wire rack, then remove from pan.
