

This is a nice, soft cake studded with fresh blueberries, and finished with a lemon glaze. It got it’s name from a teenaged girl named Renny Powell who took second place in the junior division of a Pillsbury baking contest. She cleverly referred to the cake as “Boy Bait” for its habit-forming effect on young men. Yep, it’s that good!
- 2 cups flour
- 1 1/2 cups granulated sugar
- 2/3 cup butter, softened
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 large eggs, separated
- 2 teaspoons vanilla extract
- 3 cups blueberries, coated with flour
- zest of 1 lemon
Glaze:
- 1 cup confectioner’s sugar
- 2 tablespoons lemon juice
- Preheat oven to 350º, grease a 9″ x 13″ pan.
- In a large bowl, mix flour, sugar, and butter. Reserve 3/4 cup for use as topping.
- Add baking powder, salt, milk, egg yolks, vanilla, and lemon zest the large bowl.
- Beat the egg whites until stiff peaks form, and fold it into the batter. Pour into prepared pan.
- Sprinkle with blueberries, and then the topping. Bake for 40 to 50 minutes.
- Let cake cool for 20 minutes, then mix up the glaze and pour it on top of the cake.
