One of my favorite things about summer besides swimming, are blueberries! I love baking with them, stirring them into yogurt for breakfast, or eating them as is. The market is now loaded with locally grown berries, and there is nothing better. I’m toying with the idea of freezing a few pints for a pie when the sun and heat of the summer becomes a distant memory. I think a lemon blueberry tart would be a wonderful addition to an apple or a pumpkin pie at Thanksgiving, or a batch of blueberry buttermilk muffins to fuel a long day of stuffing making and bird basting. It never hurts to plan ahead!
