Blueberry Banana Oatmeal Muffins

I’m always looking for muffin recipes to use up spotted bananas, plus fruit that’s in season. This recipe has oats and uses no butter or oil, a small amount of sour cream makes it moist. It’s a one bowl wonder!

  • 2 large eggs
  • 1/2 cup sour cream
  • 2 medium bananas, mashed
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3/4 cup oats
  • 1 cup + 2 tablespoons flour
  • 1 cup blueberries
  1. Preheat oven to 350º, line a muffin pan with 12 papers. In a large bowl, lightly beat eggs.
  2. Stir in sour cream, mashed banana, brown sugar, vanilla, baking soda, cinnamon, and oats.
  3. Add flour mix in until just combined. Fold in blueberries.
  4. Fill muffin cups and bake for 20 to 22 minutes, test with a toothpick.
