I’m always looking for muffin recipes to use up spotted bananas, plus fruit that’s in season. This recipe has oats and uses no butter or oil, a small amount of sour cream makes it moist. It’s a one bowl wonder!
- 2 large eggs
- 1/2 cup sour cream
- 2 medium bananas, mashed
- 1/2 cup light brown sugar
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3/4 cup oats
- 1 cup + 2 tablespoons flour
- 1 cup blueberries
- Preheat oven to 350º, line a muffin pan with 12 papers. In a large bowl, lightly beat eggs.
- Stir in sour cream, mashed banana, brown sugar, vanilla, baking soda, cinnamon, and oats.
- Add flour mix in until just combined. Fold in blueberries.
- Fill muffin cups and bake for 20 to 22 minutes, test with a toothpick.
