The peaches were just gorgeous in the market this weekend, as were the blueberries. I didn’t have time to make a pie, so I threw together this simple cake made with yogurt and topped with fruit. It was perfect with coffee this morning!
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 oz. butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup yogurt
- 2-3 peaches, sliced
- 3/4 cup blueberries
- 1 teaspoon granulated sugar
- Grease a 9″ x 3″ springform pan. Preheat oven to 350º.
- In a small bowl, whisk flour, baking powder, and baking soda, set aside.
- In a large bowl, beat butter, sugar, eggs, vanilla, and yogurt until smooth. Add flour mixture until just combined, and pour batter into pan.
- Top with sliced peaches and blueberries. Sprinkle remaining teaspoon of sugar on top and bake for 40 to 60 minutes. Test with a toothpick. Let cool in pan for 20 minutes, then remove from pan.
